"Tuber Magnatum Pico" is the rare white truffle of the High Tiber Valley, commonly called truffle. Is widespread in Umbria and it is harvested mainly along the banks of rivers and other water courses, more rarely in the lowland forests and mid-hill, near oaks, willow, poplar, linden, hornbeam and hazel -which lives in symbiosis. Its shape and size can vary, is outwardly smooth, pale yellow and the interior is more or less dark brown with white veins very thin; emanates an intense, delicate scent. Harvesting is allowed, according to the regional law n. 47/87, from the 1st October to 31 December. Currently it is grown on an experimental basis, with considerable difficulty.
